Lights sparkle, laughter rings out and the air is filled with magic. As we enter this enchanted season, hearts are filled with warmth and sharing. To celebrate the festive season in style, we suggest a festive pairing with Château La Garde White that we’re sure will delight your guests’ taste buds.
Shopping list
- 300 g arborio rice
- 12 finely shelled gambas
- 1 shallot, finely chopped
- 2 garlic cloves, minced
- 1.5 liters shellfish stock
- 1/2 cup dry white wine
- 2 tablespoons olive oil
- 1 cup grated Parmesan cheese
- Salt and freshly ground black pepper
- Fresh parsley, chopped
1. Bring the shellfish stock to the boil in a saucepan. Reduce the heat to maintain a gentle boil while preparing the risotto.
2. In a large frying pan, heat 1 tablespoon of olive oil over medium heat. Add the prawns and cook for about 2 minutes on each side, until pink and cooked through. Remove from the pan and set aside.
3. In the same pan, add the remaining tablespoon of olive oil. Add the shallot and garlic and sauté until tender.
4. Add the arborio rice and stir well to coat.
5. Pour in the white wine and stir until absorbed.
6. Start adding the shellfish stock, one ladle at a time, stirring constantly. Wait for the liquid to be absorbed before adding the next ladle. Continue this process until the rice is creamy and cooked al dente, about 18-20 minutes. Add the grated Parmesan and stir until well incorporated. Season to taste with salt and pepper.
7. Arrange the cooked prawns on top of the risotto. Ready to serve!
Tip: You can also add a few drops of extra-virgin olive oil for extra flavor.
